Milchkaffee

Rhine valley farmhouse milk coffee, the old partner of Ribel

Mild filter coffee, with a little roasted chicory if you like the old way, mixed half and half with hot whole milk and served in big cups or bowls: the breakfast drink of the Liechtenstein farmhouse, served beside golden Ribel.

Milchkaffee

For generations Ribel, the toasted cornmeal crumbles of the Rhine valley, was the everyday food of Liechtenstein, and its standard companion was a large cup of Milchkaffee. Liechtenstein's historical lexicon describes the milk coffee of older days as a weak brew by modern standards that stood on the stove all day, and lists chicory and malt coffee among the drinks of thriftier times. A cup of it beside a plate of Ribel and apple sauce is still how the dish is served at heritage events.

This is that drink, made with a little more coffee than the old farmhouse pot might have allowed. It is not an espresso drink and has nothing of the café about it. Brewed coffee and hot milk are mixed in equal parts, sweetened or not, and served in wide cups that are easy to hold with both hands and wide enough to dip a spoon of Ribel into. The chicory, if you add it, gives a faintly bitter, toasty depth and a deeper color.

It is the gentlest possible start to a race weekend morning: warm, mild, and in no hurry, which is more than can be said for anything that happens after the lights go out.
