Glühwein

Spiced mulled red wine

Rhine valley Pinot Noir warmed gently with orange, cinnamon, cloves and star anise: the steaming mug held in mittened hands at every Alpine winter gathering.

Liechtenstein grows wine on the sunny slopes above the Rhine, where the warm föhn wind ripens grapes that would otherwise struggle this close to the Alps. The best known vineyard, the Herawingert in Vaduz, has belonged to the princely family for three centuries, and Blauburgunder, the local name for Pinot Noir, is the grape the country is proudest of. In winter some of that red wine goes into the pot. At the Christmas market in Vaduz, at village gatherings and outdoor winter evenings, Glühwein is ladled out to anyone standing still for long enough to be cold.

Making it well is mostly a matter of restraint. The wine should be steaming, never boiling, because boiling drives off the alcohol and leaves the spices tasting stewed. A light, fruity red and a modest hand with the sugar keep it from turning into hot syrup. The full zero proof version, a spiced grape and tea punch, is in the variations, and is every bit as warming on a cold grandstand.

  1. Peel 3 wide strips of zest from the orange and 2 from the lemon with the vegetable peeler, taking only the colored skin and not the white pith. Cut the orange in half; squeeze the juice from one half and slice the other half into thin rounds for serving. Squeeze the juice of half the lemon. Keep the remaining lemon half for another use.
  2. Put the water, sugar, cinnamon, cloves, star anise and citrus zest strips in the saucepan. Bring to a simmer over medium heat, stirring until the sugar dissolves, then simmer for 5 minutes.

Warming the wine

  1. Turn the heat to low. Pour in the wine and the orange and lemon juice. Warm for 8 to 10 minutes, stirring now and then, until it is steaming. Do not let it simmer.
  2. Take the pan off the heat, cover with the lid and leave to steep for 10 minutes. Taste and stir in another tablespoon of sugar if you like it sweeter.

  1. Rewarm briefly over low heat if needed, again without simmering. Ladle the wine through the sieve into heatproof glasses or mugs and float an orange slice in each.
