Latvian spring sorrel soup with smoked pork and egg

Skābeņu zupa takes its name from skābenes, sorrel, which in turn comes from skābs, the Latvian word for sour. The soup belongs to spring, when fresh sorrel is gathered in Latvian gardens and meadows, and after a long winter of roots and preserves, a soup that tastes bright and tangy is very welcome. Latvians have long eaten the plants other countries treat as weeds, nettles and dandelions included, and sorrel is the best loved of them.

The base is homely: smoked pork ribs simmered into a gently smoky broth, with potatoes and carrot for body. The sorrel goes in at the very end and turns from bright green to olive in seconds, which looks alarming the first time and is completely normal. What it gives the soup is a lemony sharpness that cuts through the smoke and the richness of the egg and sour cream.

It is a soup that tastes like the season changing, which is a fine thing to serve on a spring race weekend when the calendar is finally finding its rhythm.
