Rye bread, cream and cranberry trifle

Layers of crunchy caramelized rye crumbs, vanilla cream and tart cranberry, chilled until the crumbs turn soft and cakey: Latvia's favorite dessert.

Rupjmaizes kārtojums

Only a country that loves its rye bread this much would think to make dessert from it, and only one that bakes rye this good would succeed. Rupjmaizes kārtojums layers grated dark rye bread, toasted in a pan with sugar and cinnamon until it smells of gingerbread, with sweetened cream and something tart, usually cranberries, lingonberries or blackcurrant jam. After a few hours in the fridge the crumbs soften into something between a cake and a crumble. It was chosen to represent Latvia's sweet tooth at a European celebration in 2006, and it is a favorite for Independence Day in November.

It needs no oven, it must be made ahead, and it looks spectacular in a glass bowl: three qualities that make it the ideal dessert for a race day, when the cook would rather be watching the race.

The toasted rye crumbs

Method

  1. Grate the bread on the coarse side of the box grater, or pulse it in the food processor, into fine, even crumbs. Crusts included.
  2. Melt the butter in the skillet over medium heat if using, then add the crumbs, sugar and cinnamon. Cook for 8 to 10 minutes, stirring often, until the crumbs are dry and crisp.
  3. Spread the crumbs on the plate and let them cool completely, about 15 minutes.

The cream and berries

  1. Crush the cranberries lightly in the small bowl with the fork and stir in the 1/4 cup (50 g) sugar. Leave for 10 minutes so the juice runs.
  2. Whip the cold cream, 3 tablespoons sugar and vanilla in the large bowl until it holds soft peaks. Fold in the quark gently with a spatula.
  3. In the trifle bowl, spread a third of the crumbs, then half the cream, then half the cranberries. Repeat with another third of the crumbs, the rest of the cream and the rest of the cranberries. Finish with the last of the crumbs.
  4. Cover and refrigerate for at least 4 hours, or overnight. Scatter with grated chocolate and a few whole cranberries just before serving.
