Late summer in Latvia brings a quiet national migration into the forests. Mushroom picking is less a hobby than a way of life, and the golden chanterelle, gailene in Latvian, with its egg yolk color and ridges running down the stem, is the mushroom almost everyone knows and trusts. Markets fill with them in the peak weeks, though serious foragers would rather find their own and keep the spot to themselves.

What happens next is nearly always the same. The mushrooms are cleaned, fried with onion and a little smoked bacon until their juices cook away, and then simmered in cream or sour cream into gaileņu mērce, chanterelle sauce, which is poured over a bowl of freshly boiled potatoes. It is one of the best loved dishes of the Latvian late summer kitchen and tastes of exactly what it is: pine forest, butter, smoke and cream.

It is a fifteen minute sauce, the kind you can cook between the end of qualifying and the post session interviews, and it makes a modest punnet of mushrooms feel like a feast.
