Chocolate coated sweet curd cheese bars

Little bars of sweet, vanilla scented curd cheese, cool and creamy like a cross between cheesecake and ice cream, dipped in a thin snap of dark chocolate and eaten straight from the fridge.

Walk into any Latvian supermarket and the dairy cabinet will hold a small army of them: finger sized bars of sweetened curd cheese in a thin chocolate coat, with fillings of jam, caramel or condensed milk. Biezpiena sieriņi, little curd cheeses, were first mass produced in the Soviet Union in the 1950s and have long outlived it. In Latvia they became something close to a national snack; in 2012 a curd snack was voted Latvian consumers' favorite product, which is a remarkable result for something that fits in a coat pocket. Estonia and Lithuania have their own versions and their own loyal fans.

Making them at home takes ten minutes of mixing and some patience while the freezer does the work. The curd is beaten with soft butter, sugar and vanilla until smooth, pressed into a pan, frozen firm, cut into bars and dipped. Once the chocolate sets and the bars thaw in the fridge, the inside turns soft, cool and creamy under a crisp shell.

They are made for grabbing on the way past the fridge, one in each hand, which is roughly how they disappear on a race weekend.
