Tarteletter med høns i asparges

Høns i asparges, hen in asparagus, is one of those dishes Danes call mormor mad, grandmother food, and they mean it as the highest praise. Chicken is gently poached, the broth is turned into a velvety white sauce with butter, flour, milk and the water from the asparagus, and the chicken and pale spears are folded back through it. The whole thing is spooned, piping hot, into little pastry cups called tarteletter. The name means hens, and older recipes call for a boiling hen, a tougher bird better suited to the stockpot than the frying pan.

Tarteletter appear at Christmas and Easter lunches, at family celebrations and parties, and on the long table of many a Danish buffet, often as a starter, sometimes as the main event. Most Danes buy the pastry shells ready made, and there is no shame in that at all; we also show you how to make them from a sheet of puff pastry in a muffin tin. The dish asks for two forks and a napkin, and more often than not, a second helping.
