Drømmekage

Drømmekage, dream cake, is the cake of Danish birthdays, school bake sales and office Fridays, and its full name is drømmekage fra Brovst, after a small town in North Jutland. The story most Danes know is that a home baker entered her grandmother's recipe in a local baking competition in Brovst around 1960, and that the cake was then taken up and published far beyond it; within a generation it was a national institution. Family accounts differ on the finer details, as family accounts tend to, but nobody disputes the result.

It is a simple, light sponge baked in a tray, then spread while hot with a bubbling mixture of brown sugar, butter, milk and coconut and returned to a very hot oven until the top caramelizes. The sponge stays soft and the topping goes chewy, glossy and toffee like. Cut into squares, it feeds a crowd generously and travels well, which is why it is a fixture wherever Danes gather to watch anything at all.
