Brændende kærlighed means burning love, which is an extravagant name for a plate of mashed potatoes. Accounts of how it earned the title differ, but everyone agrees on one rule: it must reach the table piping hot, and the romance of a pan of sizzling bacon is hard to deny. It is old farmhouse cooking, built from the three things a Danish kitchen could always count on in winter: potatoes, pork and onions.

The method is simplicity itself. Floury potatoes are mashed with butter and milk until smooth, piled onto a platter and hollowed out like a small volcano, and the crater is filled with bacon fried until crisp and onions cooked slowly in the bacon fat until golden and sweet. Grated nutmeg in the mash and chopped parsley on top are common touches, and the classic companion is a dish of sweet and sour pickled beets, whose sharpness cuts straight through the richness.

It is weeknight food in Denmark, quick and cheap, and generous enough that nobody leaves the table hungry. On a cold race weekend, it is exactly the sort of supper that makes a late finish feel like a treat.
