Bøfsandwich

The bøfsandwich looks like a hamburger for roughly as long as it takes to pour the gravy. It is a Danish snack bar classic, sold from hot dog stands and grill bars across the country since the middle of the last century: a beef patty in a soft bun with ketchup, strong mustard and remoulade, sliced pickled cucumber, raw onion and a handful of crisp fried onions. In Jutland, the long peninsula of western Denmark, it gained its signature move: slices of sweet pickled beet tucked inside and a ladle of dark brown gravy poured over the whole thing.

The result is no longer something you hold. It is eaten with a knife and fork, usually from a paper tray, and it is one of the most comforting things a cold day can offer: soft bread soaking up savory gravy, the snap of pickles and the crunch of fried onions in every mouthful. Food writers have tried to call it a gravy burger; Danes simply call it a bøf.

At home it is a fine excuse for a relaxed race day lunch. Every element can be made ahead, and the assembly takes about a minute per sandwich.
