Tiramisù

Coffee and mascarpone layered dessert

Coffee soaked ladyfingers layered with a cloud of mascarpone and egg cream under a dark dusting of cocoa: Italy's most famous dessert, made the clean classic way.

Tiramisù

Tiramisù means pick me up, a reference to the coffee and sugar in it. The best known account places its birth around 1970 at Le Beccherie, a restaurant in Treviso in the Veneto, though Friuli has a rival claim and the argument continues with great courtesy and no sign of ending. The classic version is strikingly simple: egg yolks beaten with sugar, mixed with mascarpone, layered with savoiardi biscuits dipped in strong coffee and finished with bitter cocoa. No cream, and in Treviso, no liqueur.

It is made ahead and needs a night in the fridge, which makes it the ideal finish for a race day lunch at Monza or Imola. In this version the yolks are gently cooked over hot water, so it is safe to serve to everyone at the table without changing the taste.

  1. Make the coffee, stir in the sugar if using, and pour it into the shallow bowl to cool for at least 20 minutes.

The mascarpone cream

  1. Bring 2 inches (5 cm) of water to a bare simmer in the saucepan. In the heatproof bowl, whisk the yolks, sugar, water and salt. Set the bowl over the pan, making sure it does not touch the water, and beat constantly with the hand mixer on low, or a whisk, for 6 to 8 minutes.
  2. Take the bowl off the pan and keep beating for 3 to 4 minutes until it cools.
  3. Put the cold mascarpone in the second bowl and beat it briefly with the spatula to loosen it. Add the yolk mixture a third at a time, folding gently: lift from the bottom with the spatula and turn it over the top, so the air stays in.

  1. Dip each ladyfinger into the coffee for about 1 second per side, no longer, and lay it in the dish, sugared side up. Fill the base in a single tight layer, breaking biscuits to fill any gaps.
  2. Spread half the cream evenly over the biscuits. Make a second layer of dipped biscuits and cover with the rest of the cream, smoothing the top with the spatula.
  3. Cover and refrigerate for at least 6 hours, or overnight.
  4. Just before serving, hold the sieve over the dish and tap the cocoa evenly over the top.
