Bologna's slow meat sauce, rich with pancetta, a little tomato and a splash of milk, tossed with ribbons of egg pasta. No spaghetti were harmed.

Tagliatelle al ragù

Ragù alla bolognese is not a tomato sauce with meat in it but a meat sauce with a little tomato: coarsely ground beef and pancetta cooked slowly with a soffritto of onion, carrot and celery, a glass of wine, some tomato and, often, milk to soften it. The Accademia Italiana della Cucina deposited an official recipe with the Bologna Chamber of Commerce in 1982 and updated it in 2023. In Bologna it is served with fresh egg tagliatelle, wide enough to carry the sauce, and never, ever, with spaghetti.
