A silky, sweet, bottled liqueur of Irish whiskey, fresh cream, condensed milk, dark chocolate, a whisper of coffee and vanilla, ready in fifteen minutes and best poured over plenty of ice.

Homemade Irish cream liqueur

Irish cream liqueur is a young drink by Irish standards: the first commercial one went on sale in 1974, and its trick was to persuade cream and whiskey, two things that usually refuse to share a glass, to sit together happily in a bottle. It became a worldwide success, and within the European Union the name is now protected, so anything sold as Irish cream must be made in Ireland.

At home, the method is gentler and the result is fresher. Irish whiskey is blended with sweetened condensed milk, a little homemade chocolate syrup, a pinch of instant coffee and vanilla, then the cream goes in last and slowly so it never whips. It tastes like a cross between a milkshake and a nightcap, which is exactly what it is, and a bottle tied with ribbon makes a generous present at Christmas, provided it survives the walk to the door.

It keeps for a fortnight in the fridge, so make a bottle before race weekend, pour it over ice when the podium champagne starts to fly, and drink a small, dignified glass of your own.
