Mango lassi

Chilled mango and yogurt drink with cardamom

Ripe mango blended with cool yogurt, a little milk, sugar and a whisper of cardamom into a thick, golden, frothy drink that tames any amount of chili.

Mango lassi

Lassi is the yogurt drink of Punjab, the farming state of North India, where it has long been made with rich buffalo milk yogurt whisked with water and served in tall clay cups called kulhar. It comes in two classic forms, salted with cumin and black pepper, or sweet with sugar and sometimes cardamom, rose water or saffron. The mango version, made with the fruit India grows in such abundance, has become one of the best known Indian drinks in the world.

It is a drink and a dessert at the same time, thick enough to coat the glass and cool enough to put out the fire of a spicy curry, which yogurt does far better than water. Use the ripest mangoes you can find, or a can of sweetened Indian mango pulp, which is often more reliable than the fruit in a northern supermarket. It takes five minutes and a blender, so it can be made fresh at any point in a race, from the formation lap to the cool down lap.

Method

  1. Stand each mango on its end and slice down either side of the flat central stone. Score the flesh of each half into squares without cutting through the skin, push the skin up from underneath so the cubes stand out, and slice them off into the blender. Cut away any flesh left around the stone.
  2. Crack the cardamom pods open with the flat of the knife, tip out the small black seeds and discard the green husks. Grind the seeds to a fine powder in the mortar.
  3. Add the yogurt, milk, 2 tablespoons of sugar, the ground cardamom and the ice to the mango in the blender. Blend on high for about 1 minute.
  4. Taste and blend in more sugar if the mango was tart. If it is too thick to pour, add a splash more milk; if too thin, add a few more frozen mango pieces. Blend again for 10 seconds.
  5. Pour into the glasses and finish each with a couple of saffron threads or a pinch of chopped pistachios if you like. Serve at once.
