Töltött káposzta

Töltött káposzta, stuffed cabbage, is the great winter dish of Hungary. Cabbage leaves are rolled around a filling of minced pork, rice, onion and paprika, then layered in a deep pot with sauerkraut and smoked pork and simmered for hours until everything is soft and the cooking juices turn a deep, smoky red. It is cooked all year, but many Hungarian families make an enormous pot of it for Christmas and New Year's Eve, when eating it is said to bring wealth and health for the year ahead, and it has long been part of the feast that follows the traditional winter pig slaughter.

It is one of those rare dishes that is better reheated, and Hungarian cooks say so with complete conviction. The rolls keep their shape, the sauerkraut mellows, and the paprika broth deepens, so a pot made before the weekend only improves as qualifying passes. Serve it with a generous spoonful of sour cream and plenty of fresh bread, and allow for the second helping that always follows.
