Főzelék is a dish Hungary has more or less to itself: thicker than a soup and looser than a stew, a bowl of one vegetable cooked soft and bound with sour cream or a light roux. The name simply means something that has been cooked, and a prefix says which vegetable it is. Tökfőzelék is made with shredded summer squash, and dill is not optional; nor, in most households, is a splash of vinegar at the end, which lifts the cream and makes the whole bowl taste of summer. On hot days it is even eaten cold.

On its own it is a light lunch. With a feltét, a topping, it becomes dinner, and the classic topping is a couple of fasírt, flat fried patties of pork with garlic and soaked bread. For generations főzelék was home cooking rarely seen in restaurants, and it is only lately turning up on menus again as part of a wider revival of Hungarian cooking. It is the sort of dish that sounds modest and then quietly empties the pot, a lot like a midfield car that keeps scoring points.
