Dobos torta

The Dobos torta is Budapest's most famous cake and one of the few in the world with a precise birthday. József C. Dobos, who ran a fine food shop in the city, created it in 1884 and presented it at the National General Exhibition in Budapest the following year, where Emperor Franz Joseph and Empress Elisabeth were among the first to taste it. His design was practical as well as handsome: in an age with little refrigeration, a buttercream filling and a sealed lid of hard caramel kept the cake fresh far longer than the cream filled tortes of the day, so it could travel. Near the end of his career, in 1906, he gave the recipe to the confectioners' guild so that anyone could make it.

It is a project, but a calm one. The thin sponge layers bake in minutes, the buttercream is made while they cool, and the caramel top, the part everyone remembers, takes only a few minutes of nerve. The reward is a cake of real elegance that keeps beautifully for days, which makes it ideal for a long race weekend: one slice after qualifying, and another for the podium.
