Swabian cheese noodles with crispy onions

Soft, chewy homemade egg noodles layered hot with nutty mountain cheese and crowned with a tangle of crisp golden onions: the macaroni and cheese of the German southwest.

Käsespätzle

Spätzle are the pride of Swabia and Baden, the southwestern corner of Germany that holds the Hockenheimring. They are small, irregular egg noodles made from a thick batter scraped or pressed straight into boiling water, and every Swabian grandmother has a view on the right tool and the right number of eggs. Käsespätzle is their most beloved form: hot noodles layered with grated mountain cheese until it melts into strings, then topped with onions fried until brown and crisp.

It needs no special equipment. A colander with large holes and a spatula make perfectly good Spätzle, and the uneven ones taste as good as the elegant ones. This is the hearty, warming plate eaten after a cold day at the circuit, and it is entirely possible to make it while the podium interviews are still running.

  1. Toss the sliced onions with the flour and salt in a bowl so the slices are lightly dusted.
  2. Melt the butter in the skillet over medium heat. Add the onions and cook, stirring every couple of minutes, for 15 to 20 minutes. Turn the heat down if they brown too fast. Move them to a paper towel.

The Spätzle

  1. In the large bowl, mix the flour, 1 teaspoon salt and nutmeg. Add the eggs and the water and stir with the wooden spoon. Then beat hard, lifting and slapping the batter against the side of the bowl, for 3 to 5 minutes.
  2. Cover and leave the batter for 10 minutes. Meanwhile bring the large pot of water to a rolling boil and add 1 tablespoon salt.
  3. Turn the water down to a steady simmer. Hold the press or colander over the pot and push about a third of the batter through the holes with the spatula, working quickly.
  4. Cook for 2 to 3 minutes, stirring once gently.

  1. Lift the first batch of Spätzle out with the slotted spoon, let them drain a few seconds, and spread them in the baking dish. Scatter a third of the mixed cheeses over them. Cook the next batch, layer it on top with another third of the cheese, then repeat with the last batch and the rest of the cheese.
  2. Put the dish in the oven for 5 to 8 minutes. Top with the crisp onions and chives.
