Chakhokhbili

Chicken braised with tomatoes and fresh herbs

Chicken on the bone braised in a heap of sweet onions and ripe tomatoes, finished with a great green armful of cilantro, parsley and basil.

Chakhokhbili

Chakhokhbili takes its name from khokhobi, the Georgian word for pheasant, the game bird it was once made with. Chicken took over long ago, and the dish became one of the most familiar in the Georgian repertoire: pieces of bird browned in a dry pan, then stewed slowly with a startling quantity of onions and tomatoes, warm Georgian spices and garlic. The pheasant left, but the name stayed, which is the culinary equivalent of a team keeping its old livery long after the sponsor has gone.

The moment that defines it comes at the very end, when whole handfuls of chopped cilantro, parsley and basil go into the pot. The heat wilts them just enough to release their scent, and a rich tomato stew turns bright, green and fresh. It asks for bread to mop the sauce, needs one pot and very little attention, and reheats so well that it is a natural dish to have waiting before the lights go out.
