Pori style grilled sausage slice sandwich with onion and cucumber relish

A thick slice of garlicky hunter's sausage seared until crisp at the edges, stacked between two slices of toasted white bread with chopped onion, sweet cucumber relish, mustard and ketchup: Finland's late night grill kiosk classic.

Porilainen

Porilainen, which simply means from Pori, is a sandwich with a disarmingly direct idea at its heart: instead of a burger patty, use a slice of sausage nearly as thick as a finger. That slice, traditionally jahtimakkara, a smoky, garlicky hunter's sausage, is grilled until it blisters and curls at the edges, then packed between two pieces of toasted white bread with finely chopped onion, a sweet and sour cucumber relish, mustard and usually ketchup. The name may also be a sly pun on purilainen, the Finnish word for a burger.

It was dreamed up in the late 1950s with students from the University of Helsinki involved, as a way to raise money for scholarships, and was first sold from a kiosk in Helsinki. The city of Pori, on Finland's west coast, took it to heart anyway: local grills there still guard what they consider the authentic version, and the sandwich now sits on Finland's national inventory of living heritage, which is quite a career for something usually eaten after midnight.

It is fast, filling and messy in the right way, so it is the perfect thing to hand round when the pit stops start and nobody wants to leave the screen.
