Karelian beef and pork hot pot

Chunks of beef and pork baked slowly with onion, allspice and bay until they fall apart, served with buttery mashed potatoes and lingonberries.

Karjalanpaisti

Karjalanpaisti comes from Karelia, the eastern borderland that also gave Finland its rye pasties, and it shows the region's genius for doing a great deal with very little. Two or three kinds of meat, usually beef and pork, sometimes lamb, are cut into chunks and layered in a pot with onions, whole allspice and bay leaves, covered with water and left in a low oven for hours. In Karelian farmhouses it went into the wood fired oven after the bread came out, cooking all afternoon in the fading heat. Once voted Finland's national food, it remains a fixture at family gatherings.

There is no browning and no fuss; the meat simply relaxes into tenderness while its juices turn into a rich, clear gravy. It is the ideal dish for a long race day: in the oven before the formation lap, ready by the time the podium has dried off.

Method

  1. Heat the oven to 300°F (150°C) with a rack in the lower middle.
  2. Put a third of the beef and pork in the casserole in an even layer, scatter over a third of the onion slices, a third of the allspice and salt and one bay leaf. Repeat twice more, tucking the second bay leaf in the middle.
  3. Pour the boiling water down the side of the pot until it comes about three quarters of the way up the meat, not covering it.
  4. Cover with the lid and bake for 3 hours. Check once after 2 hours: if the liquid has dropped below halfway, add a little more boiling water. For the final 30 minutes, take the lid off so the top browns.
  5. Taste the gravy and add salt if needed. Remove the bay leaves.

  1. About 40 minutes before the hot pot is done, put the potatoes in the saucepan, cover with cold water by 1 inch (2.5 cm), add a large pinch of salt and bring to a boil. Simmer for 15 to 20 minutes.
  2. Drain well and return the potatoes to the hot pan for 1 minute to dry. Mash, then beat in the butter, warm milk and salt with a wooden spoon.
