In Estonia a birthday without a kringel is barely a birthday at all. The custom of baking one for the occasion runs deep, and the shape is unmistakable: a sweet yeast dough, often scented with cardamom, rolled up with a buttery cinnamon filling, cut open along its length and twisted into a ring so the spiralled layers face the sky. Sliced thick, it is shared over coffee with whoever comes to celebrate.

It looks like the work of a professional baker and is nothing of the sort. The cut and twist takes about thirty seconds and forgives a great deal; any untidiness bakes into what looks like rustic charm. It is the ideal centerpiece for a race weekend gathering, and if someone at the table happens to have a birthday, Estonian etiquette is satisfied.
