Plum dumplings with poppy seed, butter and sugar

Whole ripe plums wrapped in soft potato dough, simmered until tender, then drenched in melted butter and showered with sweet ground poppy seed.

Švestkové knedlíky

In late summer, when the plum trees in Czech gardens bend under the weight of small, dark, oval fruit, kitchens across the country turn to švestkové knedlíky. A whole plum is wrapped in a soft dough of cooked potato, egg and flour, sealed into a smooth ball and simmered in a big pot of water. At the table the dumplings are cut open so the purple juice runs out, then buried under melted butter and either sugared ground poppy seed or grated fresh curd cheese, the topping once favored by better off households.

What surprises visitors is the timing. Czechs count fruit dumplings among the sladké obědy, the sweet lunches, and serve them as a main course rather than as pudding, a custom that makes perfect sense on the second plate. Other fruits work too, apricots and strawberries especially, but plums are the classic. They are an easy, generous dish for a late season race weekend, when plums are at their best in the shops.
