Cut beer: half pale, half dark Czech lager in layers

Czech beer comes in more shades than most countries bother with. Brewers sort it by color into pale, amber and dark, and Czech labeling rules add a fourth group alongside them: řezané, cut beer, a mixture of pale and dark. Several breweries sell it ready blended, but the pleasure of the drink is in the mixing. Pour carefully and the two beers sit one above the other in the glass in two clean bands of color; pour briskly and they marry into an even, glowing amber. Both are řezané, and both are delicious.

The appeal is easy to understand once you taste it. A Czech pale lager is crisp, bitter and bready; a Czech dark lager is softer, lower in alcohol and tastes of caramel, toast and a little coffee. Together they make a beer that is rounder than the first and livelier than the second, and the striped glass makes even a sensible beer look like an occasion.

Layering is the party trick, and like most party tricks it is about technique rather than luck. Two cold beers, a spoon and a steady hand are all it takes, and the alcohol free version below lets the drivers among your guests join in.
