If svíčková is the Czech wedding dish, roast duck is the Czech feast. It appears during the autumn round of posvícení, the village church festivals also called hody, on the feast of Saint Wenceslas at the end of September, on Christmas Day and at any family occasion large enough to justify a whole bird. The seasoning is almost severe in its simplicity: salt and caraway, and nothing else, because a duck roasted long and slow supplies all the richness anyone could want.

The plate is a fixed trio, known by heart to every Czech: the duck, a heap of braised cabbage, sweet and sour, and slices of dumpling to mop up the fat and juices. Restaurants serve it as a treat; at home it is a project for an afternoon, though a gentle one, since the oven does most of the work. It is the kind of meal that turns a race weekend into an occasion, and the leftovers are excellent.
