Cartagena beef braised in dark panela sauce

Beef eye of round browned in caramelized panela, then braised with cola, onions and peppers into a sticky, dark, sweet and tangy Caribbean roast.

Posta negra cartagenera

Posta negra is the Sunday roast of Cartagena and the Caribbean coast of Colombia. A whole piece of beef, the posta, is browned in panela, unrefined cane sugar, that has been cooked until nearly black, then braised slowly with onion, peppers, tomato, a little mustard and Worcestershire sauce. Many coastal cooks add cola to the pot, and it works: the soda reduces with the panela into a glossy, almost black glaze with a faint spiced tang.

It is served in thick slices with coconut rice, fried plantain and a tomato and onion salad, which together are about as Caribbean as a plate can get. It is cousin to Venezuela's asado negro, a reminder that the two countries share a coastline as well as a fondness for burnt sugar. Make it a day ahead and it slices more neatly and tastes better, leaving the host free during the race.

Method

  1. Pat the beef dry. With the small knife, make about 12 deep slits all over it and push a sliver of garlic into each. Rub with the salt, pepper and cumin.
  2. Heat the oil and panela in the Dutch oven over medium heat without stirring, swirling the pot now and then, for 4 to 6 minutes.
  3. Immediately lay in the beef with the tongs, standing back, and turn it every minute for 5 to 6 minutes until coated on all sides.
  4. Add the onions, pepper and tomatoes around the beef and stir for 3 minutes. Add the cola, Worcestershire sauce, mustard, water and bay leaves and bring to a boil, scraping the bottom.
  5. Cover, turn the heat to low and simmer for 2 to 2 1/2 hours, turning the meat every 30 minutes. Add a splash of water if the liquid falls below a quarter of the way up.
  6. Lift out the meat and rest it 15 minutes. Remove the bay leaves, blend the sauce until smooth and simmer uncovered for 10 to 15 minutes. Slice the beef across the grain 1/3 inch (8 mm) thick and return it to the sauce.
