Empanadas colombianas con ají

Colombian empanadas are not the wheat pastry turnovers of Argentina or Chile. They are made with yellow corn dough, fried until the shell crackles, and filled with a soft mix of potato and seasoned meat. They are sold by the basketful from street carts, bakeries and stadium stands from the Caribbean coast to the Andes, and in Colombia it is almost unthinkable to eat one without a spoonful of ají, a loose, sharp sauce of cilantro, green onion, lime and hot chili.

They are made for crowds: small, cheap, hot and eaten standing up with a paper napkin. Shape them the night before, fry them as the formation lap begins, and you will discover how quickly a basket of twenty four can disappear.

  1. Mix everything in the small bowl. Taste and adjust the salt and lime. Cover and chill until serving.

The filling

  1. Put the potatoes in the saucepan, cover with cold salted water and bring to a boil. Cook for 10 to 12 minutes, then drain.
  2. Heat the oil in the skillet over medium heat. Cook the green onions, tomato and garlic for 8 minutes, stirring, then add the cumin and achiote and stir 1 minute.
  3. Add the beef, salt and pepper and cook, breaking it into small crumbs, for 8 minutes.
  4. Add the potatoes to the skillet and mash them roughly into the meat with a fork. Taste for salt. Spread on a plate and cool for at least 20 minutes.

The dough and shaping

  1. Stir the salt, achiote and oil into the warm water in the large bowl. Add the masarepa gradually, mixing with your hand, then knead for 2 minutes. Cover and rest 10 minutes.
  2. Roll the dough into 24 balls the size of a walnut. Lay the opened freezer bag on the counter, put a ball on one half, fold the other half over and press with a flat plate or the bottom of a pan into a round about 4 inches (10 cm) across and 1/8 inch (3 mm) thick.
  3. Peel back the top layer of plastic. Put a heaped teaspoon of filling in the center. Lift the bottom plastic to fold the dough over into a half moon, and press the edges together through the plastic. Press the small plate or cutter over the edge to trim and seal it neatly. Peel away the plastic and set on a tray.

  1. Heat about 2 1/2 inches (6 cm) oil in the deep pan to 350°F (175°C). Fry 4 or 5 empanadas at a time for 4 to 5 minutes, turning once, until crisp. Drain on paper towels.
