Brevas con arequipe

Brevas con arequipe are a classic dessert of Bogotá and the surrounding highlands. Brevas are figs, picked while still firm, and here they are candied slowly in syrup made from panela, Colombia's unrefined cane sugar, often with cinnamon and cloves, until they turn deep amber brown, tender and translucent. Then each one is split and filled with arequipe, the country's beloved milk caramel, the same one that fills the wafer sandwiches called obleas.

It is a dessert of patience rather than skill. The figs need time to lose their raw sap and drink up the syrup, and the arequipe, if you make it yourself, wants a long, slow stir. The reward is a sweet that tastes of caramel, spice and fruit at once, and a slice of fresh, mild white cheese alongside makes a fine counterweight. It keeps for days in the fridge, so it can be made well before the race and brought out for the podium.
