Bogotá chicken, corn and three potato soup

A thick, golden Bogotá soup of chicken, corn on the cob and three kinds of potato, one of which melts to thicken it, served with cream, capers and avocado.

Ajiaco santafereño

Bogotá sits more than 8,600 feet up in the Andes, where evenings are cool all year, and its answer is ajiaco. It is a chicken soup made with three kinds of potato. The firmer ones hold their shape, while the small yellow papa criolla dissolves into the broth and turns it thick, velvety and golden. Pieces of corn on the cob go in too, and the defining flavor comes from guascas, a small Andean herb with a taste somewhere between artichoke, bay and fresh grass. At the table each person adds cream, capers and avocado, and rice is served alongside.

It is the dish Bogotá offers its visitors and its own families on Sundays, and it is unexpectedly easy to cook. Because it reheats perfectly and feeds a crowd from one pot, it makes a reassuring race lunch, particularly for those early morning European rounds. Juan Pablo Montoya, who won seven Grands Prix, was born in Bogotá, which is reason enough to serve it.

Method

  1. Put the chicken, water, green onion bundle, garlic, cilantro bundle, corn and 2 teaspoons salt in the large pot. Bring to a boil over high heat, skim off any gray foam, then turn the heat to medium low, cover and simmer for 30 minutes.
  2. Lift the chicken onto a plate. Remove and discard the green onion and cilantro bundles. Leave the corn in the pot.
  3. Add the russet slices and the papa criolla (or Yukon Gold) to the broth first, because both need to break down. Simmer, partly covered, for 15 minutes, stirring the bottom every 5 minutes. Then add the red potato chunks and simmer 20 to 25 minutes more, stirring often.
  4. While the potatoes cook, pull the chicken off the bones and shred it into bite size pieces with two forks. Discard the bones.
  5. Crumble the guascas between your fingers into the pot, add the chicken and the pepper and simmer for 5 minutes, stirring. Taste and add salt. If the soup is too thick, add a cup of hot water; if too thin, crush a few potato pieces against the side of the pot.
