Southern Chilean apple crumb cake

A buttery shortcrust base layered with cinnamon apples and a crunchy crumb topping: the afternoon cake of Chile's German settled south.

Kuchen de manzana

In the mid nineteenth century, German settlers arrived in southern Chile, around Valdivia, Osorno, Puerto Varas and the shores of Lake Llanquihue, and brought their kitchens with them. The legacy is everywhere in the region's cafés: kuchen, the German word for cake, baked with apples, raspberries, plums or the tart local murta berries, served with coffee or tea in the late afternoon, and now loved all over Chile.

Kuchen de manzana is the everyday classic: a firm, buttery base that holds a deep layer of sliced apples, with a crumbly topping of butter, flour and sugar. It is easy, forgiving and better on the second day, so it can be baked well before a race and served at the finish.

  1. Heat the oven to 350°F (180°C) with a rack in the middle. Butter the pan.
  2. Mix the flour, sugar, baking powder and salt in a bowl. Rub in the cold butter with your fingertips or a pastry blender until it looks like breadcrumbs. Beat the egg with 1 tablespoon milk and stir it in with a fork; add a little more milk only if needed.
  3. Press the dough evenly over the base and about 1 1/4 inches (3 cm) up the sides of the pan with your fingers. Chill while you prepare the apples.

  1. Peel and core the apples and cut them into slices about 1/4 inch (6 mm) thick. Toss in a bowl with the sugar, cinnamon, lemon juice and flour.
  2. Lay the apple slices in the chilled base in overlapping circles, packing them in tightly, and pour over any juice left in the bowl.

  1. Mix the flour, sugar and cinnamon and rub in the butter with your fingertips until the mixture forms pea sized clumps.
  2. Scatter the crumbs evenly over the apples. Set the pan on the baking sheet and bake for 45 to 50 minutes. If the top browns too fast, cover loosely with foil.
  3. Cool in the pan on the rack for at least 1 hour, then remove the ring.
