Fries with cheese curds and gravy

Poutine

Poutine was born in the small towns of rural Quebec in the late 1950s, and several of them still argue about the details. Warwick says a regular customer asked for cheese curds to be tipped into his bag of fries in 1957; Drummondville points to a drive in that sold fries with gravy and added curds a few years later. Both agree on the essentials: hot fries, fresh curds from the local cheese makers, and a hot brown sauce poured on top. Once dismissed as snack bar food, it is now Canada's best known dish and eaten from coast to coast.

The secret is the curds. They should be fresh enough to squeak against your teeth, kept at room temperature so the gravy softens them without melting them into a puddle. With properly crisp fries and a gravy that is thick, glossy and generously peppered, it is the definitive Montreal snack, and a near compulsory one on Canadian Grand Prix weekend.

  1. Melt the butter in the saucepan over medium heat. Whisk in the flour and cook, whisking constantly, for 4 to 5 minutes. Add the garlic for the last 30 seconds.
  2. Pour in the beef stock a little at a time, whisking hard after each addition to prevent lumps, then whisk in the chicken stock.
  3. Whisk in the ketchup, Worcestershire sauce, soy sauce, vinegar and pepper. Simmer gently over medium low heat for 10 to 15 minutes, whisking now and then. Taste and add salt if needed. Keep hot over the lowest heat.

  1. Scrub the potatoes. Peel them or leave the skins on, as you like. Cut lengthwise into slices 3/8 inch (1 cm) thick, then cut each slice into sticks 3/8 inch (1 cm) wide.
  2. Soak the sticks in the bowl of cold water for 30 minutes. Drain and spread them on clean kitchen towels, then pat until completely dry.
  3. Heat the oil in the pot to 300°F (150°C), no more than a third full. Fry the potatoes in 3 batches for 5 to 6 minutes each, stirring gently, then lift onto the rack. Rest for at least 10 minutes.
  4. Raise the oil to 375°F (190°C). Fry the potatoes again in batches for 2 to 4 minutes each.
  5. Lift onto the rack and sprinkle with the salt at once.

  1. Divide half the fries among four wide bowls. Scatter over half the curds, then the rest of the fries and the rest of the curds.
  2. Ladle the very hot gravy over each bowl, about 1/2 cup (120 ml) each.
