Calgary crispy fried beef in sweet, sticky chili ginger sauce

Thin strips of beef fried twice until shatteringly crisp, then tossed with carrot, pepper and onion in a glossy, sweet, sharp and gently fiery sauce of ginger, garlic and chili.

Ginger beef

Ginger beef is a Calgary original, and one of the great dishes of Canadian Chinese cooking. It was created in the mid 1970s at the Silver Inn, a family restaurant in the city, by the chef George Wong, who had trained in Peking style kitchens in Hong Kong. His first attempt, a chewy, sweet beef dish from his own repertoire, puzzled customers raised on tender Alberta steak. They did, however, love French fries, so he cut the beef into thin strips, fried it until crisp outside and tender within, and tossed it in a sweet chili sauce.

He called it deep fried shredded beef in chili sauce. The diners, the story goes, credited the warmth of the sauce to ginger and simply asked for the ginger beef, and the name stuck so well that today most cooks make sure there is plenty of ginger in it. Within a few years it was on menus across Calgary and then the country. Crisp, sticky and best eaten within minutes of leaving the wok, it is an argument for a takeout menu written in your own kitchen.
