Warm red wine, whisky and maple punch

Red wine and Canadian whisky, sweetened with maple syrup and warmed with cinnamon, cloves and orange: the Quebec Winter Carnival in a cup.

Caribou

Caribou is the drink of the Quebec Winter Carnival, held in Quebec City in the coldest weeks of the year, where carnival goers famously carry it in hollow plastic walking canes. The usual formula is three parts red wine to one part spirit, most often Canadian rye whisky, sweetened with maple syrup or sugar. It turns up again at Winnipeg's Festival du Voyageur, sometimes in glasses made of ice, and it is drunk hot or cold according to the weather, which in a Quebec February is not much of a choice.

The name is said to recall a far older mixture of caribou blood and whisky, drunk by hunters and loggers to keep out the cold; the modern recipe keeps only the color, to everyone's relief. Ours is warmed gently with a cinnamon stick, cloves and orange peel in the manner of mulled wine, and kept well below a simmer so the alcohol and the aromas stay in the cup. Montreal is rather warmer by the time the Canadian Grand Prix arrives, so the cold version is in the variations, along with a zero proof one that keeps the maple and spice for everyone.

  1. Pour the wine into the saucepan and add the maple syrup, cinnamon stick, cloves, orange peel and nutmeg if using. Set the pan over medium low heat and stir until the syrup has dissolved.
  2. Heat for about 10 minutes, without letting it simmer, until the wine is steaming. If you have a thermometer, keep it at about 160°F (70°C). If you see bubbles breaking the surface, turn the heat down at once.
  3. Take the pan off the heat and stir in the whisky. Taste carefully and add another tablespoon of maple syrup if you like it sweeter.
  4. Pour the caribou through the fine sieve into the heatproof jug, or ladle it straight from the pan, leaving the spices and peel behind.

  1. Fill the cups with boiling water and leave them for a minute, then pour the water away and dry them. A warm cup keeps the drink hot for longer.
  2. Pour about 2/3 cup (160 ml) of caribou into each cup and float an orange slice or tuck a cinnamon stick in each.
