Mumawwash

Mumawwash is one of the old rice dishes of Bahrain, built on what an island kitchen could always keep in the store cupboard: rice, dried pulses and dried shrimp. Small green mung beans, often described in English as green lentils, are simmered until just tender, then cooked with the rice in a spiced broth so the two finish together, and the whole pot is topped with dried shrimp fried with onions until they are crisp and savory.

Dried shrimp is the ingredient that surprises newcomers. Once soaked and fried, it tastes less of fish than of the sea itself, salty and rich, and a small handful seasons a whole platter. It is a modest dish in its ingredients and a generous one in flavor, which is the best kind of thrift.
