One pot spiced chicken, potatoes and chickpeas steamed under saffron rice

Chicken, potatoes, chickpeas and tomatoes braised with black lime and Gulf spices at the bottom of the pot, then crowned with parboiled rice and saffron and steamed until every grain has drunk in the juices.

Masli is Bahraini home cooking at its most generous: one pot, one fire, dinner for the whole family. The chicken goes in first with onions, tomatoes, potatoes and chickpeas, seasoned with Bahraini spices and a couple of pierced black limes. When it is nearly tender, half cooked rice is heaped on top with saffron and a little ghee, the lid goes on, and the rice finishes in the steam rising from the braise below. The same method serves for fish or prawns, which on an island makes sense, and some families turn the whole pot out onto a platter so the chicken sits proudly on top.

It is a cousin of machboos, Bahrain's celebrated rice dish, but simpler to make, with everything cooked in a single pot. The cleverness is in the layering: nothing is drained away, so the rice tastes of everything underneath it, and the potatoes on the bottom catch slightly and turn golden.

Masli asks for patience rather than skill. The pot does almost all the work, leaving you free to watch qualifying in peace and still claim the credit.
