Machboos laham

Spiced lamb and rice with dried lime

Tender lamb simmered with dried black lime and warm Gulf spices, then cooked with basmati rice in its own fragrant broth and topped with sweet golden onions.

Machboos laham

Machboos is Bahrain's national dish, the pot that appears at Friday family lunches, weddings and the breaking of the fast in Ramadan. Meat, chicken or fish is simmered with onion, tomato, dried black lime and a spice blend, and the rice is then cooked in that same broth, so every grain carries the flavor of the meat. The spices tell the story of a trading island: cardamom and cinnamon from the Indian Ocean routes, black lime from Oman and Iran, saffron from Persia, all of them meeting in a single pot.

Our version uses lamb, the festive choice. It is generous by design, meant for a large table and an afternoon that does not end, which suits a Grand Prix at Sakhir: the race runs after sunset, and the food can easily run longer.

  1. Melt the ghee in the large pot over medium heat. Add the onions and cook, stirring every couple of minutes, for 12 to 15 minutes.
  2. Turn the heat to medium high, add the lamb and turn the pieces in the onions for 5 minutes. Add the garlic, ginger, chili and half the spice blend and stir for 1 minute.
  3. Add the loomi, cinnamon stick, cardamom, cloves, tomatoes, tomato paste and salt. Stir for 3 minutes.
  4. Pour in the water and bring to a boil, skimming off any gray foam from the surface. Lower the heat, cover and simmer for 1 1/4 hours.
  5. Lift the lamb pieces onto a baking sheet with the tongs. Measure the broth: you need 4 1/2 cups (1.1 liters) for the rice. Top up with water or boil to reduce as needed, and keep the loomi in the pot. Stir in the cilantro and the rest of the spice blend.
  6. Heat the oven broiler. Broil the lamb pieces 4 to 5 minutes until the edges crisp. Cover with foil and keep warm.

The rice

  1. While the lamb simmers, rinse the rice in the sieve under cold running water until the water runs clear, then soak in a bowl of cold water for 30 minutes. Crumble the saffron into the rose water.
  2. Drain the rice and stir it into the boiling broth. Boil uncovered over medium high heat for 6 to 8 minutes without stirring.
  3. Drizzle the saffron rose water over the top. Cover with a tight lid (wrap the lid in a clean towel if it is loose), turn the heat to the lowest setting and steam for 20 minutes. Do not lift the lid.

  1. While the rice steams, melt the ghee in the skillet over medium heat and cook the onion for 15 minutes, stirring often, until deeply golden. Add the raisins, cinnamon, cardamom and sugar for 2 minutes more.
