Walnut filled crescent pastries

Tender, buttery half moon pastries filled with sweet ground walnuts and cardamom, their tops pinched into a fine pattern: the jewel of the Novruz table.

Şəkərbura

Şəkərbura is the pastry of Novruz, the spring festival that marks the Persian new year and the start of the year in Azerbaijan. A soft, rich dough made with butter, sour cream and egg yolks is folded around a filling of ground nuts, sugar and cardamom into a crescent, said to symbolize the moon. The top is then decorated by pinching the dough into rows of herringbone ridges with special tweezers called maqqaş. Families bake them by the trayful, alongside pakhlava and şorqoğal, and arranged on a tray with sprouted wheat and painted eggs.

The decorating is slow and soothing, which makes shekerbura an excellent thing to do with your hands during a long race. A pair of clean kitchen tweezers or the tines of a fork will give a handsome pattern, and no one at your table is likely to be a Novruz judge.

The dough

  1. Stir the yeast and sugar into the warm milk in a small bowl and leave for 5 minutes.
  2. In the large bowl, rub the butter into the flour with your fingertips for 3 to 4 minutes.
  3. In another small bowl, whisk the yolks, sour cream, salt and vanilla. Add this and the yeast milk to the flour and mix with your hand, then knead gently in the bowl for 2 to 3 minutes.
  4. Cover and leave in a cool room for 1 hour. It will not rise much; the yeast is there for tenderness.

The walnut filling

  1. Pulse the walnuts in the food processor in short bursts, about 10 to 12 times, then mix them in a bowl with the sugar and cardamom.

Shaping, decorating and baking

  1. Heat the oven to 350°F (175°C) with a shelf in the middle.
  2. Divide the dough in half. On a lightly floured surface, roll one half to about 1/8 inch (3 mm) thick and cut out 4 inch (10 cm) circles. Gather and reroll the scraps once.
  3. Put 1 heaped tablespoon of filling on one half of a circle, pressing it into a neat crescent. Fold the other half over and press the edges together firmly. Then pinch and twist the edge, little by little, all the way along, folding it over itself to make a rope like border.
  4. Hold the pastry in one hand and the tweezers in the other. Pinch the top surface of the dough in small, close pinches to make a row of raised V shapes from one end to the other. Make more rows beside it, angling each row the other way, until the top is covered in a herringbone pattern. If using a fork, press the tines lightly into the top in angled rows.
  5. Set the pastries on the lined sheets 1 inch (2.5 cm) apart and bake one sheet at a time for 18 to 20 minutes.
  6. Let them cool on the sheet for 10 minutes, then move them to the rack.
