Quzu buğlaması

Lamb steamed in its own juices with tomatoes, peppers and onions

Lamb on the bone layered under onions, peppers and tomatoes and cooked slowly with the lid on and almost no water, until the vegetables collapse into a rich red sauce of their own making.

Quzu buğlaması

Buğlama means steamed, and the name is the method. Pieces of lamb go into a heavy pot, a thick blanket of sliced onions, peppers and tomatoes is laid over them, the lid goes on, and the heat stays low. No stock and barely any water are added. Over a couple of hours the vegetables give up their juice, the lamb gives up its fat, and the two meet in the bottom of the pot as a glossy, savory sauce. A shower of cilantro and dill at the end, and it is done.

It is a home dish and a celebration dish at once, simple enough for a family supper and generous enough to be served when guests are expected. Fish and chicken versions exist too, but lamb is the classic. Like most dishes that look after themselves, it rewards the cook who can resist lifting the lid, a discipline also required of anyone who has ever watched a pit wall wait out an undercut.
