Baku pakhlava with walnuts, cardamom and saffron

Thin sheets of soft yeast dough layered with walnuts, sugar and cardamom, cut into diamonds, glazed with saffron and soaked in honey syrup: the jewel of the Novruz tray.

Bakı paxlavası

Pakhlava is Azerbaijan's relation of baklava, and in Baku it takes a form all its own. Instead of the paper thin pastry of the Turkish kind, the Baku version is built from a soft yeast dough rolled out sheet by sheet, with layers of ground nuts, sugar and cardamom between them. It is cut into diamonds before baking, each one crowned with half a walnut, brushed with egg yolk tinted by saffron, and drenched in syrup as it comes out of the oven, so the top shines a deep red gold.

It is above all a pastry for Novruz, the spring new year, when it sits on the festive tray beside şəkərbura and şorqoğal, and it is also the sweet that turns up whenever there is something to celebrate. It is a project, not a quick bake: an afternoon of rolling, with the radio on and flour on every surface. The reward is a tray that keeps for a week and makes any visitor feel like a guest of honor.
