Lemon sherbet with saffron and coriander seed

A pale gold, ice cold sherbet of lemon, saffron and gently crushed coriander seed, the cooling drink Azerbaijan pours beside plov at weddings and feasts.

Limon şərbəti

In Azerbaijan a sherbet is not a frozen dessert but a cold, lightly sweetened drink made from fruit, herbs or flowers, and it is treated as the most refined of the soft drinks. Rose, pomegranate, apricot, mint, basil and saffron all have their own versions, and a jug or two appears at weddings, banquets and long dinners, usually beside a great dish of plov whose richness it is meant to cut. In the month of Ramadan it is also a favorite for breaking the fast.

The lemon version is the simplest and perhaps the most elegant: a syrup warmed with a few crushed coriander seeds and a pinch of saffron, cooled, sharpened with fresh lemon juice and let down with cold water. The coriander gives a soft, citrusy, slightly floral note that most guests cannot quite name, and the saffron turns the whole jug a pale gold. It looks like something that should be complicated. It takes about twenty minutes, most of which is waiting for it to get cold.
