Roast chicken stuffed with walnuts, onion and sour plum

A whole chicken packed with a dark, sweet and sour paste of walnuts, onion, raisins and sour plum, then roasted until the skin is crisp: the festive dish of Lankaran in the far south.

Toyuq ləvəngi

Ləvəngi is the pride of the Talysh people of southern Azerbaijan, around Lankaran and the Caspian coast near the Iranian border. The word refers to the stuffing itself: walnuts and onion pounded together and sharpened with a sour fruit paste, sweetened with raisins or dried plums. It goes inside a chicken or a whole Caspian fish, the opening is sewn shut, and the whole thing is roasted, traditionally in a tandir, the clay oven sunk into the ground. It is cooked for holidays, weddings and above all for Novruz, the spring new year.

The filling is the revelation. Onion that has been grated and squeezed dry loses its harshness, the walnuts turn rich and almost meaty, and the sour plum keeps the whole thing lively. Every bite of chicken comes with a spoonful of it. It is a dish that rewards the cook who is willing to sew up a chicken, a skill that sounds dramatic and takes about two minutes.
