Tyrolean pan fried potatoes with beef, onions and a fried egg

Sliced boiled potatoes, onions and leftover roast beef fried in butter until crisp and golden, seasoned with caraway and marjoram and topped with a runny fried egg.

Tiroler Gröstl was born of the good Alpine habit of wasting nothing. Potatoes boiled the day before and the last of the Sunday roast went into a hot pan with onions and fat, and the name comes from gröstln, the Tyrolean dialect word for roasting or frying. What began as a farmhouse supper is now on the menu of almost every mountain hut in the Tyrol, served straight from the iron pan with a fried egg on top and a warm cabbage salad with caraway alongside, whose sharpness cuts neatly through all that butter.

It is the kind of dish that tastes better than it has any right to. Cold, firm potatoes fry up crisp at the edges and creamy inside, the onions turn sweet, the beef browns, and the yolk breaks over everything as a ready made sauce. Cook the potatoes the day before, as the Tyroleans do, and dinner on race day is a twenty minute job in one big pan, which leaves your attention where it belongs.
