Almond filled crescent cookies with orange blossom

Tender, buttery little crescents wrapped around a soft almond filling scented with orange blossom and a whisper of cinnamon, baked pale and gold: an Algerian Eid cookie that is far easier to make than it looks.

Tcharek el ariane

Tcharek are the crescent cookies of the Algerian festive tray, and they appear in force at Eid al Fitr, when the end of Ramadan is marked with visits, coffee and plates of homemade sweets that hosts have spent days preparing. The dough is short and buttery, perfumed with orange blossom water; the filling is ground almond and sugar, softened with a little butter and more orange blossom. Tcharek el ariane is the plain version, baked and served as it is, with a pale golden shine. Its sister, tcharek msaker, is dipped in syrup and buried in icing sugar.

Being the undressed one suits them. They are not very sweet, they melt at the first bite, and they let the almond and orange blossom do the talking. Shaping a tray of crescents is a pleasant half hour of rolling and curling that goes faster with a second pair of hands, and they keep for well over a week in a tin, which makes them an ideal thing to have in reserve for a long race weekend of tea and visitors.
